Four Breadless Sandwiches that Break the Lettuce Mold

One of the first things most of us start cutting out of our diet when our doctor tells us that we should pay attention to our blood sugar is bread. The carb-dense food is something we shouldn’t eat on a day to day basis. But what if you like sandwiches? There are breadless sandwich options that are widely known. There’s the fat-bomb KFC Double Down, which replaces bread with fried chicken. It sounds, to the Glucocil team at least, unappealing as well as a dietary nightmare. Then there are lettuce wraps, which can be tasty but get old.

Today, we wanted to look at some breadless sandwiches that replaced the bread with something more interesting than lettuce. Just because bread is a “sometimes food” rather than a staple doesn’t mean sandwiches have to disappear from our lives. Sandwiches are a subject we will undoubtedly revisit; they are a favorite lunch for so many people.

As always, we had a few rules for these sandwiches: no more than nine grams of carbs, 350 calories would be the max and no lettuce wraps. Here are four sandwiches we think sound great!

BLT Spring Roll

When you want a sandwich, a bacon, lettuce and tomato sandwich is almost guaranteed to be one of the first things that come to mind. With its high sodium and fat content, this alternative recipe might not be perfect for everyone. If salt is a concern for you, use low-sodium versions of mayo and bacon or swap the bacon for another type of meat. If, on the other hand, nothing but a BLT will do, this version of the sandwich, which uses rice paper in the place on bread, might hit the spot. The roll has 290 calories and nine grams of carbs. Cucumber Tuna Salad Sandwich

Maybe it’s because we like the extra crunch in our tuna salad, but we love this sandwich. The celery is still present, but the cucumber knocks this one out of the park for the crunchy factor. The vinaigrette adds a kick to an already great sandwich. With 210 calories and seven grams of carbs, this sandwich won’t break the bank when it comes to your diet! Get the recipe here.

Bell Pepper, Ham and Cheese Panini

If you are a fan on either paninis or peppers, this sandwich is a treat! With Gruyère and smoked ham, this panini has a lot of flavors. Eggplant and Mozzarella

Eggplant parmesan is excellent but incredibly carb-heavy. When you get down to it, what does an eggplant parm need? Eggplant, mozzarella, tomato and Italian seasonings. This fantastic sandwich has all that without the breading and bread!
