Four Savory Salads with Fruit to Mix Up Your Summer

We love eating fruit all summer long. While it’s around all year, it tastes best in summer. Fruit is an excellent source of both fiber and water. Foods filled with water help you stay hydrated, which is vital in the hot summer months. We feel like we’re thirsty all the time! Quenching our thirst before it starts with refreshing foods is great.

Last week we shared delicious zucchini salads for a break from ordinary salads. We’re back at it with savory salads that include fruit. These recipes have fruit that add both some sweetness and a sharp note and keep your salad menu full without becoming boring! And, here’s a tip, for the three recipes that call for chicken, we suggest buying a precooked bird. It helps keep heat out of your kitchen!

Mandarin Chicken Salad with Asian “Peanut” Dressing

Many chain restaurants have an Asian salad with mandarin oranges on them. They are delicious. However, they can also have around 1,500 calories! This one has chicken, crunchy carrots and cabbage, tasty almonds and an exquisite dressing you’ll find yourself using as a dipping sauce. We really do love everything about this salad, but the dressing is the star. We think you should double the recipe for the dressing and save half of it to use as a dip and sauce for other dishes. Spinach and Strawberry Meal-prep Salad

We love that this recipe gives you instructions on how to make your salad up to four days before you plan on eating it. That’s wonderful for people who have to prepare lunches and meals ahead of time. Weeks can be hectic, and sometimes cooking on a Sunday afternoon is the easiest thing. But, if you use precooked chicken, this recipe tastes just a few minutes to put together. Making the vinaigrette is probably the hardest part, and even that is simple! The salty feta and sweet strawberries marry perfectly to create a deliciously balanced salad that tastes of the spirit of summer. Low-Carb Grilled Chicken and Blackberry Salad

The combination of salty and sweet in this recipe is perfect for us! Kalamata and green olives are so salty against the blackberries in the salad. It’s an excellent meal for people who love strong flavors. With artichoke hearts, crunchy lettuce and chicken, you also have a wonderful variety of textures. We think this salad hits the right note when you’re bored with salads because a lot is going on, but it’s still easy to make and delicious to eat. A serving has 600 calories, 14.6 grams of carbs and 7.3 grams of fiber. Get the recipe.  

Guacamole and Mango Salad with Black Beans

This salad has the flavors of guacamole without being mashed. It also has the added benefits of healthy black beans. As it’s written, it’s vegan and a complete meal with 11 grams of protein. But, if you need meat to feel like it’s dinner, you could throw some chicken on top! If you are a fan of guac, you’ll be a fan of this salad. It’s a delicious option and perfect for a summer dinner. The only drawback we’ve found with it is that the flavor profile makes us want to have a side of chips! If you reach for a few chips to accompany it, make sure they are low carb. The salad has a semi-high carb count, but it’s so high in fiber that we felt comfortable including it on our list. A serving has 341 calories, 33 grams of carbs and 15 grams of fiber.
