Over the last few weeks, we have been sharing cold low-carb recipes. It’s been too hot for heat-intensive dishes. This week we are sharing some real baking recipes. We know it’s still hot outside. But, there are occasional cool days. Sometimes it cools off enough in the evening that you’re willing to crank the oven up to make a delicious treat to enjoy for the rest of the week. Here are four low-carb cobbler recipes to help your summer feel sweet!

Here’s a more traditional cobber that’s also our favorite on the list. This recipe has almonds, which add some extra crunch without adding many carbs, which we love! The recipe calls for specific thickeners, use whatever low-carb thickener you have on hand. Everyone with blood sugar concerns has one they prefer, use yours. You don’t have to go buy a special one, keep in mind that it may change the nutritional facts a little. But just Google the nutritional information of the one used in the recipe and adjust it accordingly. A slice has 202 calories, seven grams of carbs, and three grams of fiber. Get the recipe.

You are always sure to please a crowd with a blackberry cobbler. This recipe is maybe the easiest on our list. There is also a good chance you have most of what you need to cook it already in your pantry especially if you have a bag of frozen blackberries in your freezer. We love the flavor of this because it brings us back to our childhoods. If you’re anything like us, skip the step about cooking it in a cast-iron skillet. We don’t have one! Keto Blueberry Cobbler

When most people think of cobbler, they probably think of a blueberry cobbler first. They are delicious. With the buttery, crumbly topping, sweet fruit and a tiny touch of sharpness, there is truly little better than a blueberry cobbler. We’ll say something slightly controversial. We almost like low-carb cobblers more than traditional ones. They are equal in our minds. Almond flour makes low-carb versions nuttier and richer than traditional cobblers, and we really appreciate that. We like this recipe because it’s individual servings. We’re fans of portion control and being helped to not overeat when it’s something so tasty. A serving is 181 calories, eight grams of carbs and three grams of fiber. Get the recipe.
