This week marks two fun dessert-focused holidays. Both National Strawberry Cream Pie Day and National Homemade Cookie Day are this week. We’re huge fans of food holidays because they encourage us to change up our diets more often. Many bakers will tell you that baking is just chemistry. But low-carb baking can often feel like a chemistry experiment as a recipe can call for different types of oils, fiber and sweeteners. The complicated ingredients help make low-carb treats taste like, or have the texture of, the real deal. While we don’t have a problem with complicated recipes, it’s always refreshing when we see a recipe made with simple pantry staples. These soft and chewy cookies are made with ingredients you already have in your kitchen or can buy easily without going online or visiting a specialty store. These are cake-like cookies with a soft, substantial body. This is a recipe created for the paleo diet that happens to be low-carb, not one that is intentionally low-carb. So, there are places where you can cut out more carbs. The directions call for using half a cup of maple sugar. That can easily be replaced with a lower-carb sweetener of your choice. You can add extra things. But you don’t have to. Without additional mix-ins, the base cookie is delicious and so easy to make! These cookies are what we call “worryingly easy” to make, as they take under 20 minutes and have just four basic ingredients. They may become a permanent item on your menu.
