For our last recipe blog of the year, we want to help you on Christmas morning, over Hanukkah and on New Year’s.
Anyone with blood sugar concerns knows tricks to cut carbs out of holiday recipes. We’ve been writing about it for years, and it’s an essential way to stay involved. But cooking for a crowd is trickier. None of us does it often. And folks who don’t eat low-carb food sometimes don’t like it.
Today, we’re sharing four low-carb breakfasts that are great for when you are entertaining over the holidays. They are great early in the morning or at brunch. They serve a crowd or can be cooked in batches to keep everyone happy. And none of them are overly complicated, so you’ll have time to enjoy the day!

We love that this recipe contains spinach. The flavor is covered by the red pepper and cheese, but you still get the benefits of spinach on a day when you might not be eating healthily. A huge perk of this recipe is that it only has 20 minutes of active time, so you can hang out with your company. A serving has 285 calories, one gram of carbs and 24 grams of fat. Get the recipe.

This omelette is made in the oven. Just like the last recipe, this doesn’t have that much active time. You make the omelette in a sheet in the oven and then roll the filling once the eggs are cooked. While each omelette serves two people, you can make as many at once as your oven can fit. For a standard oven, that would be four sheet pans! A serving has 393 calories, one gram of carbs, one gram of fiber and 27 grams of fat. Get the recipe.

If you prefer something sweet but still want to feed a crowd, this may be your best option. Unlike normal French toast, you don’t have to cook it slice by slice, and you can prepare this the day before. It tastes like French toast without the hassle, making it perfect for a busy day! A serving has 334 calories, 5.2 grams of carbs, 2.1 grams of fiber and 26.8 grams of fat. Get the recipe.

Unlike a cupcake, these muffins are wholesome and healthy; you won’t feel bad serving them for breakfast. Of course, on a holiday, anything can be breakfast. But we prefer to start the day off on the right foot! These chocolate muffins contain pumpkin puree and almond flour. So, you are getting a hidden veggie and nuts first thing! These only take five minutes to put together and about 20 to bake! A serving has 157 calories, seven grams of carbs, five grams of fiber and 12 grams of fat. Get the recipe.
We hope you have a wonderful holiday season, celebrating with friends and family!
