Four Low-carb Tomato Dishes

We have a team member from New Jersey who is very proud of Jersey tomatoes and complains that the ones here aren’t as good as the ones she could buy at the stalls on the side of the street growing up. That might be true, but California grows more of them. But tomato season has just started. And whether or not your state is proud of its tomatoes, we’re betting they are all great in a recipe!

Tomato recipes often contain sugar and other high-carb ingredients. Today, we are sharing some tomato dishes that are lower in carbs and perfect while they’re in season all summer.

Low-carb Tomato Sauce in Five Minutes

While low-carb tomato sauce is available in stores, it’s expensive. Most recipes for tomato sauce take forever and require sugar. This one is so quick and has no added sugar. It’s made using canned tomatoes and a blender and is never cooked. You can simmer it to concentrate the flavors or heat it in the microwave before adding it to zoodles. Galettes and crostatas aren’t in our diet, but that is the technical name for this delicious tomato tart. If you haven’t tried this dish before, it’s like a more topping-forward white pizza where the tomatoes are the real star. A crust is covered in a ricotta layer and topped with tomatoes, prosciutto and garlic oil. You can easily swap the prosciutto for thinly sliced ham. It will be tasty either way! Spicy Stuffed Tomatoes

The old expression is, “Life’s too short to stuff a mushroom.” If you have been around our blog for a while, you know we love stuffed vegetables. It’s a great way to get the flavors of the vegetable into the contents and to keep the contents moist! Yes, it can be a little time-consuming. But it’s tasty, and it looks nice on a plate. You could prepare these ingredients separately and serve them next to each other on the plate. But it wouldn’t be the same. And, scooping out the center lowers the carb count while still giving you the delicious taste of the whole tomatoes used in this dish. It’s one of the few viral internet dishes that is as good as it promises to be. If anything, it over-delivers! The problem is that people with blood sugar concerns can’t enjoy it. This recipe walks you through turning spaghetti squash into spaghetti and explains the fantastic feta and tomato sauce.
