This cheesecake’s clever use of freeze-dried fruit might change how we approach making fruity cheesecakes. The dried fruit cuts out the moisture problem that comes with adding fresh fruit to a cheesecake. In the past, we have had them turn out either badly undercooked or made the mistake of overcooking them to compensate.
