National Lemon Day is this week. We love the bright summery flavor of Lemon any time of the year. But we especially love it during hot weather.

Usually when we celebrate absurd holidays, no one knows anything about their history. But National Lemon Day was established in 2024 to celebrate how the lemon brightens the summer.

Today, to celebrate National Lemon Day, we are sharing four low-carb lemon recipes — soup to dessert. You can enjoy a whole lemon-themed meal!

Creamy Lemon Chicken with Garlic

We always organize our recipes in order of carb count, so while your meal would start with soup, we’re starting with our main dish. This extremely creamy chicken dish takes only 20 minutes to make. It’s very flavorful with dill, garlic and lemon juice. The lemon juice and dill are both flavors that tend to lighten a dish. While a creamy meal might not seem ideal for summer heat, we think this is a great option, as you only need to have your stovetop on for a little while. The writer of this recipe calls it “sunshine in a glass.” We agree, it’s like distilled summer. It is made with simple ingredients you may already have and a blender. While we’re proposing this as a drink to go with our lemon-focused meal, it’s also wonderful as a breakfast drink or an afternoon alternative to ice cream. Layered desserts are always great because different layers appeal to different people, but they all come together in a cohesive dessert. This bar dessert has a pecan shortbread crush, then a layer of no-bake cheesecake, then lemon curd and finally heavy cream. Each step can take a while. The lemon curd has to chill for four hours, and the whole dish needs time to set together. This is a tasty treat, but we recommend reading the timings before you make it so you have plenty of time to finish it before serving.
