Four Wonderful Slow Cooker Chicken Dinners

While winter might not officially start until December 21, most of the country has passed the point of putting on flannel bedsheets and turning on the heating!

Our winters in San Diego are pretty mild, but while we keep our heating low, we appreciate slow cookers warming our homes during these chilly months! We’ve shared a lot of delicious slow cooker recipes in the past. They’re something we can’t get enough of! We love easy dinners. Anything that makes dinner time easier to get on the table is excellent in our books. There is a wide variety of meals you can make, which means there are endless possibilities! Today we’re sharing four chicken options that are great dinner options for you. One thing to note, slow cooker recipes have a tendency to be under seasoned. It’s not always clear if that’s because of their long cook times or because there simply isn’t enough spice in them. But, if you find these dishes under seasoned, know that you didn’t go wrong; just adjust the seasonings to your taste at the end!

Whole30 Chicken Tortilla-Less Soup


This recipe was originally written for an Instant Pot but includes slow cooker instructions. They’re only very slightly different. This soup couldn’t be easier. You get a yummy soup with Mexican flavors that is low in carbs without the traditional tortillas. You won’t miss them without how much flavor is packed into this meal! A serving has 324 calories, 12 grams of carbs and two grams of fiber. Get the recipe.

Lemon Chicken Soup


While many people don’t think to make soup in a slow cooker, we have two on this list! Soup is terrific not simply because it’s warm, filling and ready by dinnertime, but also great if you have a head cold or other illness. Nothing is better than chicken soup when you have a cold. One with tangy lemon in it makes you feel like you had tea and soup! It uses zucchini noodles to keep the carbs low. Add them at the very end so that they don’t turn soggy. This soup does take about 15 minutes of cooking before you transfer everything into your slow cooker. But it’s worth it! A serving has 213 calories, 15 grams of carbs and three grams of fiber. Pomegranate Chicken Breasts


This recipe is just for the meat. You’ll have to pick out low-carb sides to go with it. We recently covered pomegranate recipes. We didn’t include this dish for pomegranate chicken because we knew we would be adding it to this list. We think it’s perfect this time of year as many people associate pomegranate with Christmas. This recipe’s fruit juice and vinegar give the meat depth of flavor and a slight sweetness, while spices give it a kick. We believe this could become a winter favorite! A serving has 279 calories, 19 grams of carbs and one gram of fiber. Get the recipe.

Ranch Chicken and Vegetables


This is a creamy dish that is heavy on veggies. We find that, for folks who aren’t fond of veggies, putting them in a creamy ranch sauce and making them part of the main dish with meat can go a long way. Sometimes it’s not about hiding vegetables is just about the way they are presented. They are a lot more enjoyable when they aren’t a plain side! You cook the spaghetti squash separately from everything else to serve the meal. But, you use the microwave. So, this is still an effortless meal! A serving has 291 calories, 20.5 grams of carbs and 3.8 grams of fiber. Get the recipe.
