Brunch Recipes That Impress

We love eggs and believe that a healthy breakfast is a great way to start the day off and maintain healthy blood sugar as we go about living our lives. We like protein and the benefits of eggs. In fact, we’ve shared egg breakfast recipes in the past. Today, we are sharing egg recipes that may be more suited to a brunch. Some folks don’t like eating first thing in the morning, and these might suit those tastes. Sometimes, people have friends over and want to impress, and these recipes fit the bill. Always use whole eggs when possible. Even though yolks are high in fat and cholesterol, the benefits of eating whole eggs make up for it.

Breakfast Deviled Eggs

At Neuliven Health, we think deviled eggs should be at every party and are fit for every occasion. But, we admit that — despite being eggs — they aren’t a breakfast food until you add an extra breakfast twist: everything bagel spice. Everything bagel spice became popular when Trader Joe’s started selling it, but you can find a recipe for it here. A serving is two whole eggs as four pieces of deviled eggs. One serving contains 277 calories, 3.3 grams of carbs and 14.9 grams of protein. Get the recipe.

Zucchini and Prosciutto Egg Muffins

One of the reasons we like these egg muffins so much is that they are pretty. You get pops of color from the prosciutto zucchini and spinach. Onion, garlic and sweet peppers are to the flavorful punch these muffins pack. The recipe says you can make them and refrigerate or freeze them. But, the zucchini’s texture will change and the muffins will be soggy. We say make them on the day or swap the zucchini for a more solid veggie with a lower water content. The serving size is officially one muffin, we think it’s two. We are listing the nutritional information for two muffins per serving with 214 calories, four grams of carbs and 10 grams of protein. Pizza Eggs

Cold pizza is a tasty breakfast. But this hot egg pizza is even better and gentler on your blood sugar levels. The recipe says to use pepperoni. It’s brunch time so you can do what you like, but we prefer sausage or veggie pizzas. This pizza won’t have a doughy crust. Instead, it will have a runny yolk — which might be even better! And, it’s a personal pizza — no sharing needed. You get the whole mini pie to yourself!  As this recipe stands, with the pepperoni, a pizza has 397 calories, 5.5 grams of carbs and 20.8 grams of protein. Get the recipe.

Cauliflower Benedict

This is a recipe you can make ahead and still impress whoever you’re eating with. You’ll need to poach an egg before serving it, but the tasty cauliflower patties can be made in advance. One word of caution, the recipe says to squeeze liquid from the mix for the patties before pan-frying them. We say the cauliflower should be drained of water immediately after ricing or grating it prior to making the mix. A serving is one patty and one egg with sauce and ham. Each serving has 234 calories, 7.2 grams of carbs and 14.5 grams of protein. Get the recipe.
