Late August contains the dog days of summer. So it’s unsurprising that there are three National holidays about ice cream this week. Everyone is trying to stay cool. Today is National Ice Cream Pie Day. It’s a wonderful day for people too indecisive to pick between pie and ice cream — just have both. Tomorrow is National Soft Ice Cream Day. Soft serve is kinder on your teeth if you can’t cope with harder or colder ice cream. Finally, on the 21st, it’s National Spumoni Day. Spumoni can be difficult to find. It’s easier in some regions than others.

Generally speaking, ice cream isn’t low carb. And that’s not worth celebrating. So we’re here with four low-carb recipes to help you celebrate ice cream all week long!

Sugar-free Soft Serve Ice Cream

This ice cream has a pipeable consistency even when frozen for 12 hours. Eventually it will slowly reach a normal ice cream’s hardness, but it takes much longer than usual. The texture comes from the gelatin and sweeteners used. Sweeteners freeze at different rates. Because this is science as much as it’s food, we don’t recommend messing with the recipe at all. This pie stars butter pecan. It’s an old classic. And, in a pie crust, it evokes a pecan pie. Thanksgiving will be here before we know it. But right now we need cold foods to help us cool off. We’ll take a frozen pie over one right out of the oven. Make this pie early in the morning or on a cool day, as you do have to bake the pie crust. If you can’t face baking a pie crust, but want an ice cream pie, this is the recipe for you. It has a no-bake almond crust. The ice cream is dairy-rich as it’s made with heavy cream, half and half, yogurt and cottage cheese. That makes a thick and decadent ice cream that is still low in carbs, as it uses an alternative sweetener. The ice cream is loaded with berries and then topped with more, making it perfect for summer. A serving has 401 calories, 10 grams of carbs, three grams of fiber and 38 grams of fat. Get the recipe.

Low-Carb Spumoni

This is a vibrant loaf ice cream dish. Spumoni is one person on our team’s favorite ice cream flavor, and she refers to it as “Neapolitan’s more interesting friend.” It is layers of pistachio, cherry and chocolate ice cream. Depending on where you are in the country, it can be easy to find or almost impossible. But this version will let you make it for yourself in a loaf pan with fewer carbs. A serving has 280 calories, 11 grams of carbs, three grams of fiber and 27 grams of fat. Get the recipe.
