It is National Mushroom Month! One of our team members was lucky enough to grow up with hen-of-the-woods growing wild in her yard. Most of us don’t have that good fortune. And, unless you’re an expert, it’s better not to eat fungi you find in the wild — many are poisonous.

Thankfully, here in America, we have the Mushroom Capital of the World, Kennett Square, PA. The town produces over a million pounds of mushrooms daily and hosts an annual Mushroom Festival.

Mushrooms are packed with nutrients. They have fiber and protein along with minerals and vitamins your body needs. While mushrooms are very healthy, they are often used in high-carb, high-fat dishes that might not fit your health plan. So today we are sharing delicious, healthy mushroom dishes you can enjoy this month and all year round!

Air Fryer Mushrooms

Roasted mushrooms are delicious. However, many areas are experiencing heat waves. Here in San Diego, we’re not turning on our ovens! Plus, roasted mushrooms take a long time. We love this recipe for air fryer mushrooms because you get crispy, tasty, perfectly roasted mushrooms quickly and without heating your kitchen! It is so easy, and you’ll be thrilled you made them. Sautéed Mushrooms with Balsamic & Parmesan

It’s rare to see sautéed mushrooms without a heavy cream sauce. Cream sauces can be high in fat, carbs and calories, but sautéing is an excellent method of cooking mushrooms. That’s why we love this recipe. The sharp flavor of balsamic and the nutty saltiness of the cheese make a wonderful sauce that the mushrooms soak up! Low-carb Mushroom Soup

We love creamy mushroom soups. That’s why we have shared low-carb versions of it in the past. But it can be so heavy. If you are still experiencing hot weather like we are, you may want soup during the cooler evening hours but not want the heaviness the cream adds. That’s why we like this version that uses beef broth and soy sauce for the base. The recipe calls for Hungarian paprika, but whatever you have in your pantry will be fine. Mushroom Bolognese Sauce

This is an incredible vegan dinner option. Mushrooms have a meaty texture, making them an excellent stand-in for ground beef or turkey. And, even without meat, a serving had nine grams of protein! You can have this on its own or over your favorite low-carb pasta or pasta alternative. This is a bolognese that hits the spot.
