Four Cool Tarts Perfect for Hot Days

We love baked goods. The problem is that it’s way too hot to be baking anything right now. On days when it’s too hot to bake, but you still want dessert, these low-carb, no-bake tarts will hit the spot!

For this post, we’re defining a tart as something with a crust and no lid. We wanted the recipes to be low-carb, not too high in fat, and delicious.

Keto No-bake Blueberry Cheesecake

Yes, it’s hard to believe it, but a cheesecake isn’t a cake; it’s a tart. This one has an amazing no-bake crust made with hazelnuts, almonds and coconut. The “cake” portion uses gelatin to set instead of heat. You can use agar if you are a vegetarian. But, as the recipe is written, this dessert isn’t suitable for vegetarians or folks with nut allergies. It is, however, delicious. A serving has 214 calories, six grams of carbs, three grams of fiber and 17 grams of fat. Get the recipe.

Weight Watchers Key Lime Pie

We forgive how artificially green this Key lime pie is because it tastes so good. And, yes, a Key lime pie is technically a tart, not a pie. It doesn’t have a lid. This tart also isn’t technically a key lime pie as it gets its flavor — and color — from sugar-free lime Jell-O. We are willing to overlook all of that as it is so easy to make and delicious to eat. Because it calls for a store-bought crust, we recommend double-checking the nutritional information with your ingredients. With the crust they use, a serving has 42.6 calories, 7.1 grams of carbs, 0.1 grams of fiber and 1.4 grams of fat. Get the recipe.

Keto Strawberry Yogurt Cream Pie

This is a classic strawberry cream pie but without all the carbs. You get a much lighter pie by using keto butter cookies for the crust, a noncaloric sweetener and unsweetened yogurt. While the recipe calls for baking the crust, you can skip the step if you don’t mind a crumblier crust. As it’s served mostly frozen, the crust should hold together. A serving has 249 calories, 10.6 grams of carbs, 2.7 grams of fiber and 21.3 grams of fat. Get the recipe. (https://hip2keto.com/recipes/keto-yogurt-pie/)

No-bake Keto Chocolate Crust & Cool Whip and Peanut Butter Mousse

For our last item today, we are actually sharing two separate recipes. One is a delicious chocolate crust. We thought about just sharing that. But the picture of the crust shows it with a sumptuous filling! So, we are also sharing a two-ingredient, low-carb peanut butter mousse you can fill the crust with. There are few better flavor pairs than chocolate and peanut butter. We hope you enjoy both recipes. The nutritional information is a little tricky. The pie crust makes twelve slices, but the mousse is only four. You’ll have to do some math when you cut your pie. Per serving, the crust has 127 calories, five grams of carbs, four grams of fiber and 12 grams of fat. Per serving, the mousse has 75 calories, eight grams of carbs and three grams of fat. Get the crust recipe here and the mousse recipe here.

We hope these tarts are a perfect sweet treat and help you beat the heat this summer!
