The reason we love celebrating silly national holidays is that it reminds us to break out of our ruts, even our smaller patterns.

More often than not, we reach for strawberries and blueberries in the supermarket. They seem to be on sale more often than raspberries. That’s not always the case, but we get into patterns without thinking. National Raspberries N’ Cream Day is this week. To help you celebrate Raspberries N’ Cream Day, we’re sharing four low-carb creamy raspberry recipes for you to enjoy! None of these recipes require turning on the oven, and all of them are enjoyed cold.

Keto Raspberry Smoothie

We love that this smoothie has just four ingredients, including ice. It takes just a few minutes to make, and it doesn’t require any unique ingredients you’ll have to buy online or at a specialty store. A serving has 40 calories, five grams of carbs, two grams of fiber and one gram of fat. Get the recipe.

Raspberry Cheesecake Ice Cream

It is way too hot outside. We’re cooling off with every possible tool available to us. Homemade ice cream can be the perfect way to stay cool. The first step is making an egg custard on the stove. But, once it’s made, you’ll be left with a creamy, tasty frozen treat to help you beat the heat! This recipe uses cream cheese that brings a slight savory tang to the ice cream and really does make it taste like cheesecake. A serving has 282 calories, five grams of carbs, one gram of fiber and 27 grams of fat. Get the recipe.  

Raspberry Fool

We’re fools for a fool! We love a bowl of whipped cream and fruit in the summer. They are a simple dessert to make but so enjoyable. The recipe only takes about 10 minutes as you mash up raspberries with sweetener and lemon juice, make whipped cream, combine the two, and you have a raspberry fool. It’s so easy, and it’s a wonderfully light dessert on a hot day. A serving has 183 calories, six grams of carbs, two grams of fiber and 17 grams of fat. Get the recipe.

Raspberry Mascarpone Popsicles

These creamy popsicles are like a fruity version of a fudgesicle. The use of mascarpone and heavy cream makes them so creamy and smooth. And, we’ll be honest, steps 7-11 are all about finishing touches. So, if you want to skip them, you can. The last steps tell you to dip the popsicles in melted chocolate, nuts and freeze-dried raspberries. But they are wonderful without adornment. You can skip those steps if it feels like gilding the lily to you. As written, a serving has 329 calories, 10 grams of carbs, 3.6 grams of fiber and 30.3 grams of fat. Get the recipe.
