Four Delicious One-pot Beef Meals That Cut Down on Dishes

Back in September, we featured a blog of one-pot chicken meals! Then we focused on the October holidays to help you celebrate without carbs! We love being a part of your healthy lifestyle. We want to be a part of your day-to-day lives as well as big events. While we’ll be celebrating the other holidays coming up soon, today, we’re sharing some easy dinners instead!

Three of these dishes are easy, fast meals. The fourth bakes for a long time, but the active time you have to spend preparing it is relatively short. They are all one-pot meals. We love anything that cuts down on the dishes! It saves us time both while cooking and cleaning up!

Beef Stroganoff

Many of us grew up loving beef stroganoff. But few of us had it from scratch! Hamburger Helper, other mix kits and the freezer aisle are at the root of most of our beef stroganoff meals! The problem is, those dishes aren’t low-carb. The good news is, this recipe is not only low-carb: it’s tastier than the box version! And it’s easy to make. You can use any beef cut you like — just grab whatever is on sale at the store. A serving has 293 calories, three grams of carbs and one gram of fiber. Get the recipe.

This low-carb beef stew is packed with flavor from low-carb vegetables. It needs to be made in an oven-safe pot because you put it in the oven to cook after doing some initial steps on the stovetop. Look for a low-sodium beef broth; otherwise, the flavor will be off, and the salt content will be high. You can always add more salt at the end, but you can’t take it out! If you don’t have a pot that transfers from the stove to the oven, the author suggests making the stew in a slow cooker on low for five to six hours or high for three to four hours. However, that would stop it from being a one-pot meal: you still must do the first steps on the stovetop. A bowlful of the stew has 533 calories, 7.9 carbs and two grams of fiber. Get the recipe.

We love tacos! We’re less fond of all the bowls we have to clean from the toppings and the tortillas’ carbs! This recipe cuts out both, which makes it a keeper for us! It also has a hidden veggie: spinach you don’t notice! That’s good for those of us who aren’t fans but want the nutrients! This is a dinner that takes under a half-hour and is absolutely delicious! A serving is 341 calories, with nine grams of carbs and one gram of fiber. Get the recipe.

Garden Vegetable Beef Skillet

If you are a vegetable lover, this is the dish for you! It’s not a meal where you hide the greens or where they’re too small to identify! You know what you’re eating! For a lot of us, we’ve been skipping the vegetables recently. Between COVID-19 and everything going on around us, we’ve been turning to comfort foods. But vegetables are essential, and this recipe lets them shine! If you leave out the beef, it makes an excellent side dish. With the meat, it’s a full meal! When preparing your vegetables, don’t dice anything! A serving has 383 calories, 16 grams of carbs and six grams of fiber. Get the recipe.
