This week marks National Great American Pot Pie Day. With the weather cooling off, now may be a perfect time for a new pot pie recipe. If it’s still too hot in your area, keep these recipes; fall weather is on the horizon! Just like National Cheese Toast Day was invented by Sizzlers, this is another restaurant-founded holiday. Marie Callender’s invented this holiday in 2002.
A serving of Marie Callender’s pot pie has 440 calories, 40 grams of carbs, two grams of fiber and 26 grams of fat. That won’t fit into the diet of many people with blood sugar concerns. However, there are great low-carb pot pie recipes you can make that are just as satisfying. Today we’re sharing a range of options.

As we want to give you a variety of options, we’re starting off with something way outside the box. We describe egg muffins as individual crustless quiches. And while that sounds nothing like a pot pie, the added ingredients in these muffins make them taste like pot pie. They’re stuffed with chicken, onion, carrots, celery, peas, cream and mustard. It makes them a solid pot pie when you take a bite! A serving has 334 calories, 5.6 grams of carbs, one gram of fiber and 25 grams of fat. Get the recipe.

Next up, we have a classic pot pie. It uses a fathead crust with thyme added in for extra flavor. The recipe calls for three cups of cooked chicken. This is a perfect way to use up leftovers. And, instead of the normal carrots and celery, this version uses mushrooms. There is also an optional half a cup of peas. The nutritional information does include the peas, but you can leave them out if you want to cut out more carbs. As written, a serving is 376 calories, seven grams of carbs, two grams of fiber and 34 grams of fat. Get the recipe.

This soup has all the flavors of a pot pie without the crust. It’s creamy, warming and perfectly comforting on a cool evening. It also has heat from optional Hatch chiles. It also uses herbes de Provence. A spice blend of herbes de Provence can usually be found in the supermarket. It often includes lavender, which some people don’t like. If you are one of them, be sure your blend doesn’t include the flower! Unlike traditional gravy that uses flour for thickening, this soup has pureed cauliflower to keep the carbs low and add an extra veggie. A serving has 293 calories, nine grams of carbs, two grams of fiber and 19 grams of fat. Get the recipe.

If you want a non-poultry option, this beef pot pie might be perfect. It’s savory and filling with chunks of meat and an almond flour and oat fiber crust flavored with nutritional yeast. Diced radishes give the filling a pepperiness. Meanwhile, celery, onions and green beans make the dish familiar and comforting. The crust is quite delicate, so be careful when putting the lid on the pie. But if it rips, it can be patched. A pot pie doesn’t have to win a beauty contest! A serving has 592 calories, 12 grams of carbs, 7.9 grams of fiber and 46 grams of fat. Get the recipe.
As the weather cools, we hope you enjoy all of these delicious recipes!
