Four Grilled Chicken Recipes Perfect for Warm Nights

August is ending, and the kids are back in school, but the summer isn’t over! The weather is still hot, and we don’t like cooking long meals in warm weather. We also don’t like heavy meals when the evenings aren’t cool. If you’re anything like us, you’re not pulling out your winter recipes yet!

While you may want meat in your meal, we’re still interested in lighter fare and avoiding our ovens right now! That’s why we are sharing some delicious grilled chicken recipes that are low-carb and easy to make on warm nights! We think these are perfect dinners until the weather cools off!

Grilled Chicken Piccata

While this traditional Italian dish is usually battered and deep-fried, this version can be cooked on the barbecue or stovetop. Without the heavy batter, it’s low-carb but still delicious! The chicken is infused with lemon, capers and garlic with a buttery sauce and a bit of mint to bring a pop of summer flavor! This version keeps the flavor while losing the flour! A serving has 383 calories, 6.7 grams of carbs and 0.7 grams of fiber. Get the recipe.

15-Minute Cowboy Butter Chicken with Zucchini Noodles

The name lets you know this is a fast dinner! It’s cooked in a skillet — potentially over a fire! Chicken strips are cooked with butter, lemon, mustard, red pepper and lots of herbs to make a delicious sauce that combines with the zucchini for an irresistible “pasta” dish. While we admit that zoodles aren’t like the real thing, this is one of those meals that makes us not mind the missing pasta! It’s as tasty as it is easy! A serving has 582 calories, 8.8 grams of carbs and 2.9 grams of fiber. Get the recipe.

Cilantro Lime Grilled Chicken with Avocado Salsa

This meal tastes like summer! The sharpness of the lime and the fresh green flavor of the cilantro make it perfect for warm weather! As we’re located in Southern California, this meal has all of our favorite local flavors. One of our team members went to her mechanic to have her wheels replaced, and he gave her an avocado from his farm as a free gift with purchase! This couldn’t be more “in our wheelhouse” if it tried! We also love that, other than needing to let the meat marinate for a half-hour, it’s fast! There’s not much “active” time in cooking this meal! A serving has 313 calories, nine grams of carbs and five grams of fiber. Get the recipe.

One-Pan Pesto Chicken and Veggies

Just like the “cowboy” recipe, this is just one pan for a whole meal. We love it when you get a full meal with fewer dishes to clean up! With fresh and sun-dried tomatoes, asparagus and basil pesto, you get many delicious flavors from veggies! This meal is easy and quick to prepare. It’s a perfect way to eat more veggies if you aren’t a massive fan of them, as pesto tastes phenomenal on any canvas! A serving is 423 calories, 12 grams of carbs and four grams of fiber. Get the recipe.

One of these four dishes is sure to be a hit in your house while the weather is still warm! Chicken is always in season; while the flavors we add change throughout the year, it’s so versatile it always has a place on the table. These dishes are perfect for summer, but you have plenty of time to enjoy them with the heat lingering around the country!
