Four Strawberry Recipes to Sweeten Your Days!

We love fresh fruit in the summer! And strawberries are one of our favorites. Though they aren’t actual berries, they pack a ton of health benefits. They are rich in many vitamins and antioxidants while being relatively low in calories. As they are rich in fiber, they can help keep blood sugar stable despite their sweetness. That’s why, today, we are sharing four deliciously sweet strawberry dessert recipes that are low carbs and amazing!

Three of these recipes do require time in the oven. With heatwaves all over the country, they are ones to make during the cool parts of the day or wait until the weather breaks. Here in Southern California, we reached the hottest recorded temperature on Earth since 1913. One recipe (our favorite on the list) is a no-bake option. That’s what we would go for at the moment!

Low-Carb Strawberry Pretzel-less Salad

Strawberry pretzel salad is one of those desserts people love or hate. Regardless of your feelings, there is one thing that’s a fact: the traditional version is high in carbs! This uses sugar-free Jell-O, uses nuts in the place of pretzels and is delicious! We would make one small suggestion: add a pinch of salt to the base. Using raw pecans instead of pretzels is excellent from a carbohydrate point of view. However, the salt in the butter doesn’t make up for the salt you lose from the pretzels, you don’t need to add much, just a sprinkle. A serving has 199 calories and 1.6 grams of net carbs. Strawberry Icebox Pie

You could figure out a no-bake crust for this pie. However, the filling is quite wet until it solidifies in the fridge or freezer, so we wouldn’t recommend it. But we would recommend dessert! This is a creamy sweet pie that is more like a frozen mousse than a cheesecake. We cut it right from the freezer with a warm knife. Without whipped topping, it’s 261 calories. With the topping is 328 calories. Either way, it only has three grams of net carbs! Get the recipe.

Strawberry Cream Cheese Crumble Bars

There are two drawbacks to this recipe: they take a while to bake, which is a problem in the summer, and they are so delicious you may have a problem eating one serving. It’s a mix of crumble and cheesecake that we cannot get over and, its crust has a cake-like consistency that makes us feel like we’ve had so many different desserts in one! A bar has 284 calories and four grams of net carbs. Get the recipe.

No-bake Keto Strawberry Cheesecake

Our last recipe doesn’t need you to turn on the oven! That might make it a winner right off the bat for you! It uses coconut flour that doesn’t require baking, and the cheesecake isn’t so wet it will ruin the base. The instructions call for a springform pan. But, as it isn’t baked, you can line a regular cake tin with plastic wrap and lift it out very, very carefully once it has fully set overnight. This isn’t a light cheesecake. A slice has 400 calories but only 4.6 grams of net carbs. Get the recipe.
