National Pick Strawberry Day is this week. They are coming into season, depending on where you live.
Just north of our office, there is a big farm next to the highway where you can pull off and pick your own fruit with your friends and family. Roadside sign changes throughout the season to let you know what you can stop and pick. It’s written in huge letters to let speeding cars read it easily. Every year when the strawberry sign comes out, it’s a sure signal that spring is turning into summer.
To celebrate strawberries, we are sharing four wonderful low-carb desserts you can enjoy this summer!

We love a no-bake dessert. Here in San Diego, many of us don’t have AC. Whether you don’t have AC or just begrudge the electricity bill, we recommend avoiding using the oven as much as possible to keep your home cooler during the summer months! The crust on this no-bake pie is interesting to us as it uses sunflower seeds. That adds both fiber and protein to the pie. A serving has 322 calories, four grams of carbs, one gram of fiber and 32 grams of fat. Get the recipe.

We’re on record as being huge fans of dessert bars. We love how portable they are, and we love layered treats. This one has a crust, jam filling and a crumbly top. But, magically, has just six ingredients. On the downside, they do take a while to make. Read through the instructions before you want to bake them so you know how long it will take you. You need to make and refrigerate the jam before using it. A serving has 144 calories, seven grams of carbs, two grams of fiber and 10 grams of fat. Get the recipe.

Last week, we celebrated National Buttermilk Biscuit Day. If you missed it and have regretted it, here’s your chance for a re-do! This low-carb version of a strawberry shortcake uses a keto-friendly biscuit for the cake. This cake should be made no more than an hour before you plan to serve it. It doesn’t keep well. This is not the recipe for batch cooking! A serving has 375 calories, 10 grams of carbs, four grams of fiber and 35 grams of fat. Get the recipe.

There are few things better than a fun twist on a classic dessert. Tiramisu is beloved for a reason. This strawberry version is a fruity version that is perfect for a summer day when you want something with a brighter flavor. We love that it brings new life to an old, favorite dessert. This is perfect for a cookout or picnic where you want to wow your friends. A serving has 365 calories, 10.6 grams of carbs, 4.6 grams of fiber and 33 grams of fat. Get the recipe.
We hope that these wonderful recipes inspire you to go strawberry picking to make them in your kitchen!
