Four Tasty Eggplant Recipes — That Aren’t Eggplant Parm!

Last week, we wrote about just how great eggplant is. It’s low-carb, nutritious and delicious. It’s versatile and so healthy. It’s a shame we don’t see it on menus frequently — unless it’s eggplant parmesan. A fan on Facebook asked us for some low-carb eggplant recipes that weren’t fried or breaded. We really appreciate interacting with our audience and are happy to take requests whenever possible. So, we’re sharing four that we like, all with fewer than nine grams of carbs. Eggplant Pizza Bites

This appetizer is great! Be sure to keep an eye on then while baking the slices of eggplant prior to adding toppings. You want to have them a little crispy because the tomato sauce and toppings add moisture to your “crust.” A pizza is 34 calories, 3.1 grams of carbs, less than a gram of fat and 4.2 grams of protein. Stuffed Three-cheese Eggplant Roll-ups

Stuffed pasta shells are delicious, but often, they are hard to work into a healthy diet when you have blood sugar concerns. That’s when this delicious meal can save the day. It’s also a great dish for people who aren’t sure if they like eggplant but want to try something new. It’s almost a bridge between eggplant parm and a vast array of new recipes! A serving of the meal is 122 calories, 8.6 grams of carbs, 5.7 grams of fat and 10.1 grams of protein. Get the recipe.

Hamburger Pie Casserole with Eggplant

Many families love casseroles and default to them. They’re great, easy and just go in the oven. The eggplant in the casserole does require a quick pan-fry, but you can cook it in the oven in you prefer. A slice of the dish has 222 calories, seven grams of carbs, 13 grams of fat and 21 grams of protein. Get the recipe.

Moussaka

You might think that moussaka is too high in calories to make one of our weekly recipe blogs. But this recipe cuts the flour from the bechamel and adds in a ton of veggies. While it is higher in calories than the other recipes, it’s not outrageous, and it’s a great meal that we couldn’t leave off the list. This version has 300 calories, 16.3 grams of fat, eight grams of carbs and 20.3 grams of protein. Get the recipe.
