It’s January, and it’s cold. Sometimes, friends and family tease us for claiming we’re cold. Weather apps have recently been giving us frost alerts, warning us that there might be frost overnight. To many parts of the country, it seems absurd to be cautioned about frost, but to us, that’s like being dropped in a frozen tundra! Cold is a relative experience.

People around the country are cold; even though our thermometers have different readings, we’re all feeling chilly! That’s why today we are sharing delicious, warming dinners. Lots of cozy recipes are filled with fat — even low-carb recipes fall into that trap. But it’s possible to make a dinner that leaves you satisfied and warm without high fat levels. Check them out!

This recipe is a bit confusing as it calls for “silverbeets.” You don’t have to go to a fancy grocery store, and it’s not the name of a new trendy vegetable. The recipe is from an Australian website. Australians call Swiss chard silverbeets. It also calls for “capsicum.” That’s what they call red bell peppers. We like reading international recipes because we enjoy eating new tasty foods and learning the names of foods around the world is fascinating. This great vegetarian stew isn’t hard to make and is perfect for cold nights when you want something warming and full of plant protein. Skillet Lemon Chicken with Spinach

Chicken thighs aren’t used often enough. People go for the breast more often than not. The thigh is juicier, tastier and less expensive. This recipe is easy and delicious right away or as leftovers. However, acid from the lemon and white wine in the sauce will brown the spinach, so serve right away for the most visually appealing meal. And, yes, the sauce has wine, so if you are doing a dry January, you might want to hold off a couple of weeks and make this in February. It will still be yummy then. We love sheet pan dinners because they are so easy. They are easy to cook; they’re easy to clean up. And you get over-roasted vegetables — which are our favorites! When you can cook your meat and veggies all together, we’re huge fans. This fish is seasoned perfectly and cooked just the way we like it.
