Four Veggie Soups for Cold Days

A lot of Americans are still experiencing freezing weather, many of us are having chilly days. The Glucocil team is lucky that we are in San Diego, where the weather has been mostly in the mid-sixties. We still have cold nights, so we wanted to share some of our favorite low-carb veggie soups with you. These are the soups we turn to when to when it’s cold outside, and we want to feel cozy without worrying about our blood sugar!

In the past, we’ve shares meaty soup recipes and ones for creamy soups, but today we are looking at soups with delicious chunks of vegetables! The creators of all these dishes say to use reduced-sodium chicken broth. But, they can easily be made with reduced-sodium vegetable broth to make them vegetarian.

Pumpkin Veggie Soup

We’re not done with winter or its flavors. That’s why we love this soup that uses pumpkin puree! It’s used as both a thickener and as a flavor enhancer. It’s so tasty and takes the place of tomatoes. We also love the wilted spinach added at the end of the cooking time to give us the benefits of the leafy green without the spinach being cooked to death. It’s another recipe that says to use chicken broth, but use veggie broth if you prefer! Two cups of the soup have 51 calories and 10 grams of carbs. Get the recipe.

Tomato Veggie Soup

We love the texture cauliflower lends this soup. While the recipe says to cut the cauliflower into one-inch pieces, we say leave them a little larger so you can really enjoy the mouthfeel of the veggie! The tomatoes and Italian seasoning remind us of restaurant vegetable soup, but we get to enjoy it in our own kitchen! A serving has 79 calories and 11 grams of carbs. Get the recipe.

Lentil Soup

Legumes and beans are fiber-dense and can help both appetite and blood sugar. This recipe has all the usual components of so many veggie soups — carrots, onions and celery but also uses a cheese rind for extra flavor. The lentils make it a filling soup that is hearty enough to serve as a low-calorie meal, while still allowing you to enjoy side dishes. A serving has 89 calories and 6.8 net carbs! Get the recipe.

A Ton of Veggies Soup

This is probably our favorite soup out of this list purely from an ingredient standpoint. It’s got the standard onion, carrots, celery as well as zucchini, cabbage, spinach, cauliflower, green beans and more. This is a soup where we like to throw the kitchen sink into the pot. We add bell peppers, broccoli and whatever else we have in the kitchen. A serving (without all our add-ins) has 124 calories and 11 grams of carbs. Get the recipe.
