Low-carb, Low-fat Cheesy Dishes

We love cheese. It’s hard to find someone who doesn’t. Of course. If you are lactose intolerant or a vegan, it isn’t your thing. But everyone else is, almost universally, in love with cheese!

It’s not too hard to find low-carb cheesy recipes. That’s a good thing. For us, giving up cheese would be nigh on impossible! But the problem is, so many recipes are shockingly high in fat! It will sound delicious, but then we look at the nutrition facts and are horrified. A dish can be low in carbs and have 50 grams of fat!

Just because a recipe fits one of your health goals doesn’t mean it fits all. These recipes will hit the spot if you want to cut carbs and fat while still enjoying cheese! They feel wonderfully decedent while not being outrageous as far as nutrition goes!

Jalapeño Popper Chicken

One person on our team said she would live off of jalapeño poppers if it were an option. It simply isn’t. They don’t have enough protein and they are deep fried. Nutritionally, that would be an awful move. But this delicious chicken breast meal turns all the flavors into a healthier meal. You can cut out more fat from this dish using low-fat cream cheese. However, low-fat cream cheese doesn’t melt as well. And, per serving, there is only one ounce of cream cheese. You can also leave out the bacon. But, again, it’s 1/16 of a cup per serving. Overall, this recipe is a great way to indulge in less healthy in a tasty and healthier way! A serving has 318 calories, three grams of carbs, one gram of fiber and 19 grams of fat. Cheesy Ground Beef & Cauliflower Casserole

Cheese and ground beef in a casserole is an American flavor we will never get enough of. The problem is that the two can quickly add up to a lot of calories and fat. That’s why we love this recipe that stretches it out using cauliflower. Cauliflower easily absorbs the flavor of a dish, adds a pleasant texture and makes a meal more complete with fiber. This dish also uses green peppers and pickled jalapeños for more flavor. It’s a fast dish to make, and it could become a go-to in your house as it is so darn good! Cheesy Portobello Chicken Cutlets with Broccoli

This is a great dish that balances strong flavors and textures. We appreciate the flexibility of the dish as you can use Gruyere, Jarlsberg or any other Swiss cheese. The portobello mushrooms add their distinct flavor and a firm texture to make this a meal that doesn’t need sides, and the broccoli adds more fiber and an extra veggie. One of the most common low-carb gripes we hear is that people miss pasta. We get it! Low-carb pastas you can buy in-store are getting better and better. But we personally love spaghetti squash. It is a wonderful noodle-like veggie to get pasta sauce into your mouth. And at the end of the day, that’s what it’s really about! This dish is creamy and delicious but uses low-fat dairy options everywhere it can to cut out calories and fat. It keeps the dish as creamy as possible while also making it lighter. This is a dish that makes you feel like you’re breaking all the diet rules while you’re making great choices! A serving has 373 calories, 20 grams of carbs, four grams of fiber and 12 grams of fat.
