Three No-bake, Blood Sugar-friendly Nutty Desserts

We haven’t shared any recipe desserts in a while. We love dessert. It’s hot outside and, while we want something sweet, we don’t want to turn on our oven. This week we wanted to offer you nutty recipes with under 150 calories and less than five grams of carbs. It’s been a while since we looked at nuts. Many fruits are in season, and it’s hard to think beyond them. But, it’s important to keep your diet varied. Nuts are delicious all year round, and we have three great desserts that won’t force you to heat up your kitchen and will help you satisfy your sweet tooth!

Ferrero Rocher Cookies

These fabulous cookies have only four ingredients! They can be refrigerated for up to four weeks. With 103 calories, and under 4.5 grams of carbs, this tasty treat can be part of your day without worry! Get the recipe here!

Peanut Butter Chocolate Squares

This treat is high in fat but with a cup of peanut butter and ten ounces of butter that’s hardly surprising. If you are looking to cut back on fat, this recipe isn’t for you. But, with only 130 calories and three grams of carbs, if all you’re concerned about is carbohydrates and calories, they might be a hit with you. The recipe says to melt the chocolate in a double boiler but, we think, if that much heat is just too much for you, that a microwave can be used just as easily. Get the recipe here!

Pistachio Truffles

Not everyone likes chocolate, and some people don’t like it in the summer. For those people, we have one final amazing nutty dessert that is chocolate free and still nutty as all get out! There’s a touch of vanilla, but these pistachio truffles aren’t quite as sweet as you might expect. They are just four ingredients mixed and chilled. What’s really neat about the dessert is that — with only a few tweaks — it can be a savory snack instead. As a sweet, each serving has 121 calories and .5 grams of carbs. Get the recipe!
