We are so pleased to have fall weather all finally here! Fall activities are in full swing, and we’re excited to visit corn mazes and go on haunted hayrides. It’s wonderful to pull our sweaters out of the bottom drawer. It’s fantastic to be outdoors without sweating just from stepping outside.

We’re also excited that we’ve reached a point where turning our ovens on no longer makes our homes unbearably warm! We’re reaching for our casserole dishes again, and it’s a relief. This week we’re turning to sheet pan dinners. We love “one-pot” meals. They make cooking and cleaning a snap. They have nowhere near as many steps as many other recipes, and cleaning up is much easier. These four recipes are perfect for this time of year when the weather isn’t too hot or too cold.

Sheet Pan Sesame Chicken and Broccoli with Scallion-Ginger Sauce

This recipe uses bone-in chicken thigh. Bone-in cuts do better than boneless chicken in the oven. They are juicier and hold their moisture better. The great news is chicken thighs are usually cheaper than breasts in the store! The sauce is the main star of this dish. This is one of our team member’s favorite dinners. She cooks it once a month in cool weather. It’s effortless and tasty to boot! The vegetables she uses change as the winter progresses so she can use what’s in season. This recipe is perfect as it uses squash, as it’s now coming into season. Soon Brussel sprouts will be featured in our team member’s version of the dish. This recipe is exactly right for this month! A serving has 325 calories, nine grams of carbs and two grams of fiber. If you’re looking for a dish with warm spices on a cold night, this is the meal for you! It’s also wonderful reheated. The recipe couldn’t be easier as you simply season the chicken, cover some cauliflower in coconut milk and seasoning and then bake it all together!
