Four Coffee-forward Recipes

We love the flavor of coffee as the days grow cooler. It can be a wonderful ingredient as well as a drink. National Coffee Day happens this week, and we’ll happily celebrate the drink in the cooler weather.  

Coffee has many healthy attributes that we have written about frequently. It also has a rich, deep flavor that makes it beloved. It works as both a drink and a flavor in savory and sweet dishes, so today we are sharing a range of recipes that use coffee as a stepping-off point!

Keto Pumpkin Spice Latte

At this time of year, it would be almost criminal to not share a low-carb version of a pumpkin spice latte. One person on our team went to Starbucks on August 29th for the seasonal treat and sent a photo of her drink as a group text with the caption “Tis’ the season.” While pumpkin spice latte season might be beloved, the drink is high in carbs and fat, so copycat versions like this one allow you to enjoy it more frequently. This version of the drink has 22 calories, two grams of carbs, one gram of fiber and one gram of fat. Get the recipe.  

Coffee and Wine Beef Stew

If you are somewhere where stew weather has already hit, this dish may be perfect for you. While wine and coffee may sound like an odd combo for ingredients, they marry for deep flavors along with mushrooms and beef stock. This is a filling and comforting meal you may find yourself making all winter long. A serving has 504 calories, 2.7 grams of net carbs and 32.2 grams of fat. Get the recipe.  

Coffee Almond Panna Cotta

Panna cotta is delicious. This version is even better as everyone can enjoy it. It’s low-carb, vegan and gluten-free. Usually, there is some form of dairy and gelatin, and there is often a crust or starchy crumble with gluten. This version is safe for everyone to enjoy. But, if someone has a caffeine sensitivity, be sure to use decaf coffee — that’s the only drawback we can foresee! The panna cotta is served with an easy, tasty berry compote that adds fiber and a touch of sharpness to the otherwise sweet dish. A serving has 75 calories, eight grams of carbs and three grams of fiber. Get the recipe.

Instant Pot Mocha Rubbed Pot Roast

Unless you’re a vegetarian, it’s hard to find someone who doesn’t love pot roast! Pressure cookers, like the Instant Pot, make it so much faster. But you can easily make this delicious mocha pot roast the traditional way. Either way, you’ll be left with a chuck roast that is falling to pieces after being cooked in a coffee and cocoa sauce. It’s slightly sweet, a little hot from chili powder, and a perfect pick-me-up on a cold night. A serving has 489 calories, 17 grams of carbs, four grams of fiber and 27 grams of fat.
