Four Frighteningly Good Low-carb Pumpkin Cheesecakes

As Halloween is next week, it’s unsurprising that National Pumpkin Cheesecake Day is this week! Pumpkin is everywhere we look. They are decorating people’s front doorsteps, in our coffee cups and they should certainly be in our desserts!

The problem with Halloween treats — and treats in general — is that the carbs that go along with them can be too much! You might think “spooky season” is downright scary when you have concerns about you blood sugar. But, with the right recipes you can enjoy all the fall treats without upsetting your blood sugar. Here are four low-carb pumpkin cheesecake recipes that aren’t scary at all!

Mini Keto Pumpkin Cheesecakes

It's excellent that these mini cheesecakes are pre-portioned. That not only helps with portion control, it also makes them bake faster. Plus, you don’t need a springform pan to make them — just a muffin tin. Be sure, when you are shopping to get canned pumpkin puree, not pumpkin pie filling. No Bake Keto Pumpkin Cheesecake

This is a wonderful option for people who prefer the texture of a “no bake” cheesecake. It’s just as thick, rich and creamy but it is softer than a baked cheesecake. It’s a great choice if the weather is too warm for baking yet! It’s an awful big country! In San Diego we’ve broken out our long sleeves, other stops have snow on the ground and some places are still sweltering. If you want the flavors of fall but the idea of turning on your oven is unappealing, this is the cheesecake for you! Make it the day before you wish to enjoy it as it does need to be refrigerated overnight. A serving has 157 calories, seven grams of carbs, four grams of fiber and 13 grams of fat. Get the recipe.  

Keto Pumpkin Cream Cheese Muffin

If you are looking for a midmorning treat, this might be your perfect brunch option. We’re not sure if it’s supposed to be a Starbucks copycat recipe. But it is awfully similar to their pumpkin cream cheese muffin. The difference is that this one is low-carb and doesn’t have pumpkin seeds on top. If you want a full copycat version, add the pumpkin seeds. The Starbucks version has 350 calories and 34 grams of carbs. In this version, a serving has 208 calories, seven grams of carbs, three grams of fiber and 19 grams of fat. Get the recipe.

Pumpkin Cheesecake Cottage Whip

A lot of people seem to feel like they aren’t hitting their health goals if they haven’t had at least some cottage cheese during the day. There are a lot of uses for cottage cheese. We don’t think it is the be all and end all of low-carb eating. But, if you a tub of it in your fridge, this recipe would be an excellent way to use some of it! This is an easy and fast way to make a lovely dessert. You can enjoy it right after blending it or chill it for a more solid whipped texture. Either way, you are in for a treat!
