Four Homemade Low-carb Pasta Recipes

National Pasta Day is this week. While some proclaim it a great opportunity to carb-load, we know people with blood sugar concerns often shun the dish. Avoiding large amounts of traditional pasta makes sense when you’re concerned about your blood sugar health. However, you shouldn’t have to skip such an important national holiday!

Today, we’re sharing four different recipes for low-carb pasta. None of these are zoodles. They’re different ways of making low-carb noodles — not veggies shaped like noodles. You can top these noodles in whatever sauce you like.

This first recipe is baked in the oven as a sheet, and then strips of the pasta are sliced and immediately served with your desired sauce. They bake in eight minutes and have just four ingredients, including salt. You’ll have dinner on the table in under twenty minutes! A serving has 162 calories, one gram of carbs and 14 grams of fat. The Best Keto Spaghetti Pasta Noodles

These noodles are very close to “normal” pasta in flavor. The texture is slightly slipperier as they are almost all water by weight. That makes them more filling and lower in carbs. This recipe reads a bit like a chemistry experiment. But while the ingredients might be a bit more scientific than our daily staples, they yield tasty low-carb noodles that taste like the real thing. A serving has 38 calories, 1.6 grams of carbs, 1.5 grams of fiber and 2.3 grams of fat. Get the recipe.

Keto Pasta (2 Ingredients!)

This recipe has two ingredients: mozzarella and egg yolks. Follow the directions carefully. Getting the temperature correct at each step matters. Your egg yolks have to be room temperature, your melted mozzarella can’t be too hot and you have to let it fully chill in the fridge before trying to cook it, or it will fall apart. It’s a delicate dough. A serving has 236 calories, two grams of carbs, one gram of fiber and 25 grams of fat. Get the recipe.

Almond Flour Pasta

We love that this recipe is not only delicious, but it also has instructions on how to make different pasta shapes. You can make five shapes of pasta from this dough and then cover them in your favorite sauce. The almond flour in the recipe gives it a more traditional mouthfeel than some of the other recipes on the list. While the pasta cooks for only two minutes in a pan, shaping it can take longer, so plan ahead. A serving has 213 calories, seven grams of carbs, three grams of fiber and 18 grams of fat. Get the recipe.

We hope you enjoy a plate full of pasta this week without worrying about your blood sugar. Any of these recipes will surely thrill you!
