Four Low-carb Chip Recipes When Nothing Else Will Satisfy

Crunchy vegetables are great. They are cooling, healthy, a tasty dip can make them fantastic, and they have a satisfying crunch. But, as much as we love celery spread with peanut butter, sometimes it isn’t enough. Sometimes we want the crunch of a chip, and raw veggies just won’t cut it. Then we tell ourselves that one serving of potato chips won’t derail our blood sugar or weight loss goals too much. And then, if you’re anything like us, you’ve eaten far more than a serving purely by mistake. Someone even coined the term “snaccident” to explain the problem.

The best way to avoid “snaccidentally” eating chips is to keep them out of your house. But not all chips are created equal. There are recipes to let your make homemade chips that are low-carb, crunchy and delicious. They may have more calories than regular chips. But, if you are more concerned about carbs than calories, that might not matter, and not all of them are outrageously calorific.

Two Ingredient Low-carb Chips

We love these chips. They are salty, crispy and flavorsome while being low-carbs. They are not healthy food, not even a little, and their fat content is high. But, as an occasional chip, or if you are on keto, they are amazing! Pork rinds and cheddar cheese are crushed together and baked under the broiler to make these delicious treats. The recipe makes 20 large chips. They are filling, but we disagree with the recipe that calls one chip a serving. You’ll have to test them for yourself. One large chip has only .1 grams of carbs, but each chip has 69 calories. Get the recipe.

Zucchini Chips

This recipe has a much more reasonable serving size: two medium zucchinis yield eight servings. And if you go over one serving, it is still okay. These are so crispy and tasty. The secret is how thin they are cut before going into the oven. The recipe says to just use salt. That makes them like a plain salted chip. But, we would suggest more herbs and spices, a mix akin to one you would use while roasting a chicken! That makes them pack a lot more flavor. They do take a long cooking time at low heat, so we suggest making them on a cooler day or doing it in the evening once the day has cooled off a little. A serving has two grams of carbs and just 23 calories. Get the recipe.

Tortilla Chips

There is always the argument about which chips are better for salsa: corn chips or tortilla chips? We don’t have an answer for that. We will say that, even with as much searching as we have done, there is no recipe for low-carb corn chips. Corn isn’t a low carb food. So, when we want salsa, those of us with blood sugar concerns can enjoy homemade tortilla chips. We love these because they are easy, tasty and fast! A serving is nine chips: enough to enjoy your salsa! A serving has 140 calories and two grams of carbs. Get the recipe.

Almond Butter Cabbage Chips

We like this recipe for the taste but aren’t huge fans of anything else about them. They take an awfully long time to cook and use ingredients most don’t have. Are they tasty? Heck yeah. But, you have to go out and buy things specially, and then cook them for six hours in the oven or a dehydrator. If you have a dehydrator or love trying new recipes, they are a great idea. We, personally, will stick to the other three on the list. But, we would feel remiss not to share this recipe for cabbage chips. They are great if you are a fan of kale chips. A serving has 158 calories and five grams of net carbs. Get the recipe.
