Four Low-carb, Low-fat Lemon Desserts

The spring has officially sprung, putting us in the mood for fruity desserts. However, many fruits aren’t in season yet. The good news is lemons are still in season, and we love their fresh flavor that brings brightness to our days.

We’re in that wonderful time of year when you can start wearing your lighter clothes, but you can still turn on your oven without overheating your whole house! So, we are sharing four wonderful low-carb, low-fat baked lemon treats for you to enjoy during these early spring days.  

Lemon Soufflés

Soufflés aren’t easy to make. Even preparing the ramakins to bake them in takes time. However, they are worth it. We wouldn’t recommend this recipe to someone who has never baked before. We would recommend reading it over several times before trying it. However, it will be worth the effort. The other big thing to remember about soufflés is that they don’t keep. They have to be served as soon as they come out of the oven as they will deflate. A serving has 45 calories, zero grams of carbs and three grams of fat. Get the recipe.  

Lemon Magic Custard Cake

Magic custard cake, sometimes just called magic cake, might actually be magical. Baking science can explain how one batter separates into three layers as it cooks. But we’ve never looked into it. All we know is you make the batter and end up with a crusty bottom, custard filling and a light, fluffy cake topper. This keto version has a lighter texture than most, making it very morish. Still, it’s always important to pay attention to serving size! A serving has 123 calories, three grams of carbs, one gram of fiber and 11 grams of fat. Get the recipe.

Lemon Bread

We love that this recipe can be made with an egg or a flax egg, which the two recipes above can’t. The price of eggs right now can be preposterous depending on where you are in the country. There are a lot of baking tricks to remove them, but not from soufflés or magic cakes. This bread gives you the option of using a flax egg; other tried and true methods could also work. Lemon bread is delicious as dessert, an afternoon snack or a sweet but satisfying breakfast. This version is made with plain yogurt and almond flour, so it would be a surprisingly healthy way to start your day. A serving has 108 calories, 5.2 grams of carbs, 2.8 grams of fiber and nine grams of fat. Get the recipe.  

Lemon Cheesecake Bars

Finally, we have delicious triple-layered lemon cheesecake bares. We are suckers for cheesecake and shortbread. Using a shortbread crust for a cheesecake gets our attention. When you top the whole thing with a layer of lemon bar, we are sold! We adored this dessert, and we hope you do too.
