Four Low-carb Nacho Recipes

National Nacho Day happens this week. There really is a holiday for everything.

The beloved dish was invented by Ignacio “Nacho” Anaya around 1943 when he made a snack for U.S. Army wives when they came into his restaurant after it had closed. The name Nacho’s Special morphed into special nachos over the years.

If you have blood sugar concerns, nachos may seem like a forbidden fruit. They are awfully high in carbs. Even a small amount may be too much for you without planning ahead. But we want everyone to be able to celebrate a holiday, no matter how small. Here are four low-carb recipes made with different bases to give you lots of options!

Keto Nachos with Pork Rinds

We like that this is a classic recipe with a twist. The beef spice blend is very traditional. And the toppings aren’t anything fancy. But by swapping chips for pork rinds, you substantially cut down on the carbs, making this a perfect dish. Obviously, you can add more toppings. But keep track of the carbs as they can add up! Mini Pepper Keto Nachos

If you would like to add an extra vegetable to your day, this might be the perfect meal for you! This recipe uses mini peppers in place of chips. We love that the small bell peppers hold so much and don’t go soggy like chips! While they do soften up a little in the oven, they don’t cook all the way through, so they stay crunchy. It’s a new texture and taste, and the assorted colors of the mini peppers make this a stunning dish on game day! A serving has 352 calories, 6.5 grams of carbs, 3.2 grams of fiber and 13.5 grams of fat. Get the recipe.

Keto Nachos (With Legit Tortilla Chips)

This is one of those recipes where we say to read it twice and plan ahead. The first step of the recipe is to make another recipe. First, you make homemade low-carb chips. So you have to account for that in your cooking time. If you want nachos with chips, this is a wonderful option. But it does mean planning ahead so you have the chips when you need them. The chips are great just as a snack! A serving of the nachos has 276 calories, nine grams of carbs, 4.5 grams of fiber and 26 grams of fat. Get the recipe.

Low-carb Beef Nachos

This is a simpler approach to low-carb chips. Instead of making homemade low-carb chips. This recipe has instructions on turning low-carb tortillas into chips. If you want chips but don’t want the involved process of making your own from scratch, this is a good option for you. It’s not quite as low-carb, but it’s still pretty darn low! A serving has 342 calories, 11 grams of carbs, seven grams of fiber and 23 grams of fat. Get the recipe.
