We are melting here in San Diego. Compared to the rest of the country, we live on easy street weather-wise. So, when we’re hot, we know most folks are sweltering!  

Last week, we shared delicious no-bake tarts. This week, we wanted to share some fabulous vegan desserts that don’t require you to crank up the oven! If you don’t eat dairy, we also want you to have amazing sweet treats! Coconut milk helps make them creamy and delicious. These are all low-carb and simple to make.

There is nothing like a creamy popsicle on a hot day. But if you avoid dairy, many of them are off the menu. These only take 10 minutes to prepare before freezing and have five ingredients. You can convert the recipe into ice cream if you would prefer that. A serving has 258.8 calories, 2.3 grams of carbs, 0.9 grams of fiber and 10.4 grams of fat. Get the recipe.

We all know that we shouldn’t eat raw cookie dough. Raw eggs and uncooked flour are dangerous because they can contain harmful bacteria. As this uses cashew butter and almond flour, it’s completely safe to eat raw. And it’s delicious! It’s the cookie dough you can eat with a spoon while feeling great because it’s low-carb and made without eggs or dairy. Keto Peanut Butter Pie

As far as flavor combinations go, it’s hard to beat peanut butter and chocolate. Put it in a creamy and rich pie, and it is even better! This pie makes it vegan by using non-dairy cream cheese and coconut cream. It’s low-carb because it’s made with almond flour and a noncaloric sweetener. And, as the crust is frozen, none of it needs to be baked! A serving has 284 calories, 8.9 grams of carbs, 2.7 grams of fiber and 25.4 grams of fat. Get the recipe.

This is a decadent and creamy dessert. Be sure to read the recipe fully before starting. You have to soak the cashews in these bars. That takes time. Nothing is worse than getting out all of your ingredients and realizing you must wait for one to be usable. You also need some space in the freezer as these need to set in an 8-inch square pan in the freezer. This is a fast recipe to make, but quite a lot of idle time is involved! The ingredients call for maple syrup. If you replace that with low-carb maple syrup, you can make it even lighter. As written, it is already low in carbohydrates.
