Four Wonderful Asparagus Recipes

We always love absurd National holidays. Some are fun to celebrate, others highlight important topics and others are silly. But, sometimes, they help bring things we don’t think about to the forefront. It’s National Asparagus Month. And we’re celebrating!

People love to hate asparagus. It’s right up there with Brussels sprouts as a maligned vegetable. But the fact is, when properly cooked, it’s delicious! It’s low in carbs and can help lower blood pressure and stroke risk!

If you aren’t a fan of asparagus, it’s time to revisit it. It might not be your favorite if it’s just steamed. Some people cover it in heavy sauces. But we wanted to offer you some more unique and tasty low-carb options!

If you follow our blog, you know we love deviled eggs. In fact, we think they are heavenly! We have shared a ton of recipes for them in the past. There is only one problem with them: they have no crunch. If there is one way we would improve deviled eggs, it’s by adding texture. This recipe, with pan-fried pancetta and asparagus, has different crunchy textures that improve an already perfect appetizer! A serving has 230 calories, 3.7 grams of carbs, 1.6 grams of fiber and 19.8 grams of fat. Get the recipe.

Asparagus is often added to quiche. If you want a straightforward breakfast, you can do away with all but five ingredients and make this cheesy, tasty meal! You get rid of the carbs of the crust and pretty much all of the prep work. This is a great recipe for people who love simple foods cooked perfectly! And it’s always a great idea to start the day with a vegetable. A serving has 217 calories, four grams of carbs, one gram of fiber and 16 grams of fat. Get the recipe.

Using lightly fried zucchini strips, you make a wrap for an asparagus, ricotta, feta, parmesan and pesto filling. From that list of ingredients, you can tell this dish is packed with flavor. Your dining companions will be blown away by the presentation and the taste! A serving has 180 calories, six grams of carbs, two grams of fiber and 15 grams of fat. Get the recipe.

Cream of Asparagus Soup

We have shared many creamed vegetable soups in the past. We love that this one can be served hot or cold. That makes it perfect for this time of year! It’s also much lower in fat than many cream soups. That’s essential when trying to manage your weight. It’s also nice that the instructions don’t call for an immersion blender. We don’t know about you, but we don’t have every kitchen gadget in the world, and sometimes, we don’t make recipes simple because we don’t have all the equipment! This one is achievable as long as you have a pot and a blender of any kind! A serving has 188 calories, 7.9 grams of carbs, 2.8 grams of fiber and 16.6 grams of fat. Get the recipe.

We hope you have fun celebrating asparagus this month and all summer long!
