This is a great anytime recipe. It can be a healthy snack or a main dish for dinner. We love finger foods for easy dinners! Combining pickled eggs and deviled eggs brings together two of our favorite recipes. If you don’t have beets, you can either skip them or use carrots. You could also use beet powder, but no one in our office has that in their pantry! You can also skip the peppers and just add a pinch of whatever spicy pepper powder you have in your spice rack. One piece of deviled egg is 72 calories and has one gram of carbs, so scale that nutritional value as you see fit to find out what one serving is for your preference. Get the recipe.
We like eating fresh veggies because it adds variation to our diet with the changes of the season. Right now, that’s harder than usual. We’re turning to our freezer to make sure we still get our greens! Many studies have proven that frozen vegetables are just as good as fresh ones. We like this egg recipe because it uses a verity of veggies, and you can really use whatever you have. If you don’t have an oven-safe skillet, just use a plate to flip the whole thing to cook both sides without making an omelet. If you’re anything like us, you can a can of beans, a jar salsa, a sachet of taco seasoning, shredded cheese and eggs. Salsa has a long shelf life, and if you have been saving it for a get-together, that plan has gone out the window for at least a couple of months! Crack it open now and make these tasty egg muffins! The instruction says to use taco cheese, but you can use whatever you have in your fridge. These really are a great “anytime” recipe. A muffin has 124 calories and two grams of carbs. Get the recipe.
This is a recipe that would be perfect for a brunch because it looks so impressive. But, it can nice to treat yourself when disconnected from people. The instructions call for fresh parsley, which always looks nice, but it’s really not necessary to enjoy the dish. Will all of these recipes, we say to use substitutes as you see fit.
