Granita is an Italian dessert from Sicily. It’s a lot like sorbet in that it’s vegan, frozen, lighter than ice cream and sometimes contains alcohol. But, while sorbet is churned in a machine and smooth, granita is more like shaved ice. You pour it into a shallow dish to freeze and occasionally scrape it with a fork to create icy shards that can be enjoyed from a bowl or even with a straw!
We’re huge fans of this dessert because it’s light and refreshing. Plus, it’s just less fussy to make than sorbet. And, while it’s hot outside, we don’t have the patience for fussy desserts! So, this blue slush lives up to its name. No one on our team had heard of the drink, so we were trying to find a nautical theme to this delicious recipe. There isn’t one; it’s just a delightful summery concoction. Made from sugar-free syrups, coconut milk and vodka, it’s a cocktail you eat with a spoon as you bid goodbye to the last days of summer! If you don’t drink, or you want an afternoon pick-me-up, this delicious treat is a sophisticated dessert. Made with dark roast, you get a bit of caffeine. You flavor this recipe with cocoa powder or cinnamon to bring out the flavor of dark roast coffee and give it more depth. Coconut milk adds a creaminess without adding dairy. Watermelon is often skipped by people with blood sugar concerns. But, if you use it in a recipe, or even just enjoy it in moderation, it’s fine. This recipe can be made without alcohol; swap the rum for water. If you do that, we suggest adding mint to add a little bite to the dish. The recipe calls for a small amount of sugar. To cut out the carbs from that, use a noncaloric sweetener instead. As it’s written, it’s delicious and low-carb, but it could be lower.
