Last week, we had some excellent non-dairy recipes. Not all of them were vegetarian and ranged from snacks to desserts. Today, we are focusing on giving our vegan customers low-carb vegan meal options!

Vegans are vegetarians who don’t eat any animal products. That includes meat, fish, dairy, eggs and honey. If it contains something from an animal, vegans don’t eat it! It can be hard to find vegan recipes for meals. It’s even harder to find an option that is low-carb and vegan! Finding something substantial enough to be considered a main course that doesn’t have animal proteins in it is challenging. But here are four great options.

Just because you don’t eat dairy doesn’t mean you can’t have cheese! These lasagna roll-ups are made with a tofu ricotta filling that hits the spot! Our recommendation with this recipe is to be careful with your marinara sauce. It doesn’t specify a brand to use. Some can be low-carb, others are very high in sugar. We’re huge fans of stir-frying. It’s a wonderful way of getting dinner on the table fast! You don’t have to use much fat to stir-fry, despite what the name might have you think! In the summer, it’s an excellent way to cook without making your whole house warmer. And stir-frying is a great way of packing a lot of flavor into one dish. We love this recipe! The sauce has punches of flavor with ginger, lime, chili, garlic and more. But the actual stir-fry is simple, with just tofu and broccoli. You can serve it with cauliflower rice for a full meal. This is another cheesy vegan recipe. The page links their vegan cheese sauce recipe or says you can use store-bought vegan cheese. We recommend their recipe. Store-bought vegan cheese tends not to melt as well, and you want this to be topped with gooey, tasty cheese. These stuffed zucchinis use chickpeas for their filling and are so hearty reviewers have said family members thought there was meat in them! Even omnivores will love this dish! Low-carb Vegan Dinner Bowl

This dish is by far the most complicated one we have on our list today. However, it is a whole meal with sides and is delicious. Steps can be done beforehand if you want to make it more quickly in the evening, but it takes time! It’s one of those recipes you should sit down and read from start to finish several times before starting because you need to have everything together to make this tasty meal. You’ll be happy you did it, but it takes forethought! It has tasty baked tofu, seasoned cabbage rice, steamed broccoli and kale from nutrients and fiber, an excellent dressing and silky avocado, all adding up to an excellent meal. It just takes effort! A serving has 423 calories, 30 grams of carbs, 14 grams of fiber and 27 grams of fat. Get the recipe.
